A traditional Cretan cheese made from goat’s milk
A purely traditional Cretan cheese made from goat’s milk or mixed.
It is a product of particularly simple cheesemaking, usually prepared at home by adding salt and vinegar, or sour, or lemon, to boiling milk and without the use of rennet.
It is eaten fresh or slightly ripened. It is wonderfully accompanied by thyme honey and fresh bread.
For summer evenings accompanied by watermelon, figs, peaches and cold tsikoudia (raki).
A cheese that is not salty, it goes perfectly with macaroni, with ladera, cheese for toast or saganaki covered with batter.
It is kept in the refrigerator or in oil.
