The fruit is harvested using an oil-machine, the main condition is to be careful not to injure the trees and not to affect the quality of the fruit, so that is can maximize all the organoleptic characteristics and have extra virgin olive oil.
The Cretan diet consists of products of animal and vegetable origin, against diseases that attack the human body and in favor of their prevention. The rich Cretan diet in olive oil has a significant and rejuvenating effect on the longevity of Cretan.
Olive cultivation in our family started about 300 years ago, where our great-great-grandfathers were among the first to grow olives in the mountain mass of Psiloritis and the wider area of Maleme, Chania.The olive oi produced from a single vanity gives the characteristic taste & aromas of the tree, as well as the characteristics assonated with the soil and climate of mount Psiloritis and white mountains. The most abundant variety of olive in the region is Koroneiki. This very small olive produces an excellent fine, fruity, aromatic olive oil. Our olive trees date from the 1800s to the present day, as our great-great-great grandparents, and we, grew up with the trees as traditionally the land is passed down from generation to generation. The respect for the health of the soil of our estates and the cultivation care of the trees, with the primary purpose of producing an olive oil – “medicine”. An excellent final product that both ours and your family will consume fearlessly and in measurable quantities…!
Also, our oil is collected from olive trees located in Maleme, Chania, the Paparaftakis family, the most abundant olive variety in the area is Koroneiki. This very small olive produces an extremely delicate, fruity, aromatic olive oil. Our olive trees date from 1800 until today, since our great-great-great-grandparents, and we, grew up with the trees as the land was traditionally inherited from generation to generation.

Enjoy it raw with fresh bread instead of butter in your breakfast, sprinkle it on a barley nut with oregano and salt, add rinds of Cretan gruyere or brine cheese (feta), finely chop a fresh tomato. Use it in all stews, roasts, salads, pastas, make cakes, pies and anything else you like, replace it with lard. The extra virgin olive oil “El-aionas” gives you health and longevity!
