Skiufichta are the spaghetti of Crete. They are not made with foil like many other fresh pastas.

Their main ingredients are wheat flour or Carob flour, water, salt and a little olive oil.

The name “skioufihta” or “skioufikta” comes from the verb “skioufizo”, which means “twist”, i.e. twist, in the Cretan dialect.
