Skiufichta are Crete’s version of spaghetti!
They are not rolled out with a pin, but hand-twisted. Made with wheat or carob flour, water, salt and a touch of olive oil.
The name “skiufichta” comes from the Cretan word “skioufizo”, meaning to twist.
